  • 1/4 lb mozzarella cheese
  • 1 egg
  • 2 tbsl flour
  • 1/2 cup parmesan cheese

  • 2 tbls olive oil
  • 1 tbls minced basil

InstructionsInstructions  cut eggplant into thick slices. Dredge in flour seasoned with basil, oregano, and bread crumbs. Let stand for 10-15 minutes. Fry until brown on each side. In casserole dish arrange layers of eggplant slices, mozzarella cheese and sauce, repeat until all used. Sprinkle shredded mozzarella and Parmesan cheese on top and bake at 350 for 45 min
